Now I have had enough!!!! Ok....with the awful economy we have had so much depressing news.....lay offs.........bad housing market.....dwindling nest eggs.........car sales in a slump......it goes on and on......the news is so depressing.............now I have the icing for the cake..........this morning AOL had an article that just really proves we have hit rock bottom.......THERE IS A SHORTAGE OF PUMPKIN PIE FILLING!!!! Which translates into possibly no pumpkin pie for Thanksgiving!!!!!! Due to the rain that was in the mid west...the pumpkin crops were ruined and now that is not good!!!!!!!
Something as simple and comforting as a slice of pumpkin pie...........now possibly extinct until next fall.......this is it.........we have hit rock bottom......

- Lemon Freeze......Fab Intermezzo1 Cup Milk 1 cup Whipping Cream 1 Cup Sugar 3 TBSP grated lemon rind 1/3 Cup Fresh Lemon Juice Combine milk, whipping cream & sugar in a medium bowl..stir until sugar dissolves. Cover and freeze 2 hours. Add rind and juice, beat at medium speed of an electric mixer 3 to 5 minutes or until thickened. Cover tightly, and freeze at least 24 hours and up to 2 weeks! Serve in beautiful tiny glasses witha sprig of mint...to be served between salad and main course or a holiday or fancy dinner.
